This time I went local, to my province, Ilo-ilo.

After a sumptuous dinner, My boyfriend and I were up for desserts. My cousin suggested that we go to Nothing but Desserts.

When I heard the name, I thought it was just a description of the actual store but then she reiterated and I thought it was an exciting place to be to enjoy desserts – since the name itself says it!

It was perfect because the store was just a few walks away from our dining restaurant.

From a far, I easily noticed the name of the store and I felt a sudden excitement and craving.

I was pretty overwhelmed with huge selections of desserts!  most of them are European – inspired.

Michelle & El's Kitchen

Our new favorite cookies around here are Kate’s  Thumbprint cookies! I used to make these growing up and had a hankering to make them again. I bet you already have most of these ingredients:

  • 1 cup of softened butter (I nuked in the microwave for about 20 seconds)
  • 1/2 cup of sugar
  • 2 egg yolks
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon salt
  • 2 c up of all-purpose flour
  • Preserves, Nutella, basically whatever you feel like
  • 1/2 cup powdered sugar

In your mixer or with a hand mixer, beat the butter/sugar together until creamy.

Wisk your egg yolks and add to the mixing bowl

Then add the salt, vanilla, and slowly the flour, until well combined and it looks like this:

Roll into balls (I used a 1 tablespoon cookie scooper), and make indents in the center with your thumb

A Merry Journey

Crepes are fabulous. Yummy, light, easy and perfect for a lazy sunday morning.

I use this Basic Crepes recipe from All Recipes. Flour, eggs, water, butter, milk and salt. Poof!

Mix everything is a bowl and whisk until smooth. The batter is actually quite runny, which surprised me… but no worries it worked perfectly.

I sprayed my little non-stick pan with vegetable cooking spray and turned the burner on high.

Then I poured a litte less than a 1/4 cup of batter into the pan and swirled it around so the entire pan had an even coating of batter. The recipe says to cooke it for 2 minutes on each side, but I don’t like my crepes too brown. I just eye it until the crepe easily frees itself from the pan and it begins to lightly color. Spring, where are you?

It´s been a long and cold winter.  Today is the first day since november  it´s rather warm.  It´s been almost constant snow for about 4 months now.  I´d like to think that spring is here!  The good thing about Iceland and spring is the daylight, now it starts getting bright outside around 6.30 in the morning and the sun goes down around 8.30 in the evening.  I welcome that after a long dark winter.

I haven´t had an alarm clock for about 10 years now.  I haven´t been on a 9-5 job for a long time and for the last 10 years I´ve been my own boss, and for the last 2 years a stay at home mom with a little girl who likes to cuddle.  But without an alarm clock I always got up at least around 9.  I am the early to bed, not…

Making My Mark

My daughter chose a breakfast-themed lunch this week, with a Sausage Biscuit Sandwich, Hash Browns, Broccoli, and Strawberries. Since Lightlife makes breakfast sausage and Alexia makes hashbrowns, all I had to do was make the biscuits. Yeah for me!

I picked up a couple of new cookbooks and, of course, had to start using them right away. I had a chocolate cookie crust that had been in the cover for long enough, and found a recipe for the above mentioned pie in Let Them Eat Vegan!. It was easy to put together, and the filling, which was gluten free, made enough that I got a nice-sized bowl of it all to myself! It’s nice when things work out that way.
