Making My Mark

My daughter chose a breakfast-themed lunch this week, with a Sausage Biscuit Sandwich, Hash Browns, Broccoli, and Strawberries. Since Lightlife makes breakfast sausage and Alexia makes hashbrowns, all I had to do was make the biscuits. Yeah for me!

I picked up a couple of new cookbooks and, of course, had to start using them right away. I had a chocolate cookie crust that had been in the cover for long enough, and found a recipe for the above mentioned pie in Let Them Eat Vegan!. It was easy to put together, and the filling, which was gluten free, made enough that I got a nice-sized bowl of it all to myself! It’s nice when things work out that way.
